Recipe: Manchow Soup (Guest Post)

What is it that you dream of on a chilly winter evening? A hot, spicy finger lickin good soup is an obvious answer to me. And hence, I tried my hand at my favourite soup which I’m sure is a choice of the masses too. The Manchow Soup. My first attempt turned out to be extremely delicious and I plan for many variations, the next time I make it.

Preparation time: 20mins
Servings: 5 bowls

Special Instruction: Always keep your ingredients ready and near you while preparing any Chinese dish. Put the gas on High heat throughout.

Ingredients:
2-3 Garlic flakes
1 ½ tbsp Soya Sauce
1 tbsp Vinegar (optional)
2 tbsp  Corn flour
2 Green chillies finely chopped
2 tbsp Coriander
2 tbsp Mint leaves (Pudina)
Salt and Pepper as per taste
Vegetable Stock-
½ cup Chopped Carrots
½ cup Chopped spring onion
½ cup Chopped Cabbage
6 Cups of water/ vegetable stock.

Procedure:

1. Start by boiling 6 cups of water with a good pinch of salt and add the vegetables one by one. Keep stirring till the color of the water changes. This should take approximately 12 mins. Alternatively, you could also use real stock cubes. I used both for the best results.



2. Now strain the vegetables and run cold water through them so that the cooking process stops immediately and their colour remains unchanged.
3. Now we begin with the actual soup preparation. Start with putting your gas on a high heat and in a Kadai or a deep vessel put around 2 tbsp oil. Let the oil heat up nicely.
4. To that, add Garlic flakes and the Chillies. Give it a toss and then add the vegetables.



5. Keep on tossing the mixture for a minute and then add the vegetable stock, we had prepared earlier. Keep stirring continuously.
6. Now put the Soya sauce and Vinegar. Check the seasoning and add Salt if the need be. Be cautious with salt since the soup will already be a bit tangy due to the sauces.
7. Add in the Coriander and Mint leaves to add an Indianized flavour to the soup. All the while, keep stirring.


 The soup should be looking something like this by now.

8. Now comes a crucial step. If you nail this right, your soup will attain a new dimension altogether. In a cup, take 2 tbsp of corn flour and add 3-4 tbsp of water and mix it well. Keep mixing till it has a flowy consistency yet it’s a bit thick. Make sure there are no lumps and then add the mixture to the soup. This helps in thickening up the soup. Again Stir.



9. The last step, taste your soup and depending upon how spicy you want it to be, add Pepper. You may also skip this step.

10. And Lo Behold, your Manchow Soup is ready in no time. Relish this soup sitting in your balcony as the winter breeze passes along. Each sip is a surprise and you keep wanting more and more.
